Meet the Chef: Leopoldo Magurno at Chalfont Dene

From learning the basics in his family kitchen in Italy to crafting dishes for our owners and guests, Leopoldo Magurno’s journey is one filled with passion, tradition, and a love of flavour.

Leo’s career began in Italy, where he discovered the joy of transforming simple ingredients into something special. Inspired by his mother, who loved experimenting with recipes, he quickly realised that food wasn’t just about eating – it was about sharing moments.

"I started this job because of my passion for cooking and good food. I learned by working in different restaurants in Italy, and slowly, over the years, I grew as a chef."

 

From Italy to the UK

 

Ten years ago, Leopoldo made the leap to the UK. His goal was to broaden his culinary horizons and explore new flavours. His journey has been hands-on and humble. Beginning as a kitchen porter before moving through the ranks as a pizza chef, junior sous chef, and sous chef.

"I came here to expand my knowledge and learn other types of cuisine. Starting from the basics again, I worked my way up to where I am today.”

A passion for people, as well as food

 

For Leopoldo, the joy of cooking comes from the reaction of those at the table. 

“I like to put ingredients together and create simple, delicious dishes full of flavour. Every time I prepare something, I hope to make guests happy and satisfied.” 

That care extends beyond the kitchen. Unlike a busy restaurant where guests come and go, Leopoldo loves the community feel at Audley Chalfont Dene. 

“Cooking here is very nice because we know each other. After service, I always go around the restaurant to thank owners and guests for coming – and to hear their feedback too.”

If there’s one dish close to Leopoldo’s heart, it’s tiramisu. A recipe passed down from his mother, it’s been a constant in his culinary journey and a reminder of family traditions in Italy. 

“Every time I make it, it reminds me of my childhood and good family memories. I hope people find an explosion of fresh and tasty flavours – the balance of cheese and coffee that most people love.”

 

Three words Leopoldo uses to describe his tiramisu? 

Sweet, soft, and delicate. 

 

On the Autumn Menu now

We’re delighted to share that Chef Leopoldo’s tiramisu has made its way onto the new Autumn menu, now available across Audley Villages restaurants. 

It’s the perfect way to round off meal – comforting, indulgent, and made with the same love and authenticity that first inspired Leopoldo back in his mother’s kitchen.
