A deliciously light and fluffy dish with a citrus flavour – the perfect accompaniment to any dinner this summer.
Serves 4 - 6
1. Pour boiling water over the couscous, cover and leave for 10 - 15 minutes.
2. Using a fork, stir through the couscous to loosen up the grains.
3. Add the rest of the ingredients to the couscous and serve immediately, or store in the fridge for later.
