EGGS BENEDICT

Ingredients

  • English muffin
  • York ham
  • Hen egg
  • Water
  • White wine vinegar
  • Hollandaise sauce (egg yolk, butter and vinegar reduction)

Method

  • In a sauce pan, add water and white vinegar and bring to simmer
  • Poach the hen egg in the simmering water and vinegar
  • Toast the muffin
  • Serve the muffin, York ham and then the poached egg on a plate and pour Hollandaise sauce over it
  • Garnish with some garlic chives and amaranth
