Ingredients
- English muffin
- York ham
- Hen egg
- Water
- White wine vinegar
- Hollandaise sauce (egg yolk, butter and vinegar reduction)
Method
- In a sauce pan, add water and white vinegar and bring to simmer
- Poach the hen egg in the simmering water and vinegar
- Toast the muffin
- Serve the muffin, York ham and then the poached egg on a plate and pour Hollandaise sauce over it
- Garnish with some garlic chives and amaranth
