CHICKEN CAESAR SALAD

from our Chef in Cobham

Give our traditional Caesar salad recipe a whirl, featuring juicy chicken breast, crispy gem lettuce, and a lavish drizzle of creamy dressing. This recipe combines a delightful medley of flavours, ideal for a light lunch or supper.

Ingredients

  • Chicken breast
  • Baby gem lettuce
  • Anchovies
  • Garlic croutons
  • Parmesan cheese shavings
  • Caesar salad dressing
  • Amaranth (optional)
  • Mayonnaise (swap for vegan Mayo if necessary)
  • Garlic
  • Salt
  • Lemon juice
  • And for extra proteins add a Scotch egg on top

Method:

  • Cook the chicken any way you like it: grill, pan or oven
  • Toss the baby gem lettuce in two tbsp of Caesar salad dressing and dish on a plate
  • Add the cooked chicken on and 3 - 4 anchovies 
  • Springle Parmesan shavings and add the garlic croutons
  • Drizzle a little bit of Caesar salad dressing on the salad
  • Dress with red amaranth or place the Scotch egg on top

For the Caesar dressing combine mayo, parmesan, garlic, lemon juice, salt and anchovies.
